Triana Marie French Bread

Recipe From : S/V Triana Marie

Ingredients:

1 pkg. yeast
2 cups water (115 degrees)
2 Tbsp. sugar
1 Tbsp. salt
5-7 cups flour (can be white/wheat mixture...see below)
cornmeal
egg white (optional)
sesame seeds (optional)

Makes 2 loaves

Directions:

Dissolve the yeast in the water. Add the sugar and salt. Let sit while you measure the flour. Take your time. Mix liquid and flour.

Knead for about 5 minutes. Then let it rest for about 10 minutes and then knead it for a few more minutes. Put about a tsp. of oil in a bowl. Put dough in the bowl and cover. Put in a warm place for a couple of hours.

After rising for a couple of hours, punch dough down and divide it in half. Knead each half for a minute. Then form into 2 long, thin loaves. Put cornmeal on a cookie sheet, then the dough, then spread with egg white, if desired. After 5-10 minutes, put it in the oven, then turn on the heat and cook until golden brown.


Notes or special instructions:

Triana Marie uses 2 cups of wheat flour and 4+ cups of white flour.

I use 1 1/2 cups wheat flour and 4 1/2 + cups of white flour and I spray the bowl and dough with PAM spray instead of using the oil.

I don't knead it the last time before baking and I bake it at 375 degrees.

I like to use the egg white and sesame seeds on top.
