Milady's Simple Peach Cobbler

Recipe From : S/V Milady - Brad, Sandy, Kurtis, and Christin Meilink

Ingredients:
2 1/3 cups peaches (or 2-3 15oz canned peaches, drained)
1/4 cup honey
1/2 tsp. vanilla extract
1/4 tsp. cinnamon
vegetable cooking spray
1/2 cup flour
1/4 cup FIRMLY packed brown sugar
1/8 tsp. salt
3 Tbsp. margarine, cut into small pieces
2 Tbsp. pine nuts



Directions:

Preheat oven to 375 degrees.

Combine first 4 ingredients into a 2-quart casserole coated with cooking spray, toss well. Combine the flour, brown sugar, and salt in a small bowl; cut in margarine with a pastry blender or 2 knives until the mixture resembles coarse meal.  Sprinkle mixture evenly over peaches.

Bake for 30 minutes or until lightly browned and bubbly.
