Almond Muffins


Serves/Makes: Makes 12 muffins

Recipe from: A variation of the Wholesome Sweet Muffins from the 'Muffins, Nut Breads and More Cookbook'

Ingredients:
1 3/4 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1 egg
1/3 cup oil
1/2 cup sugar
1 1/2 teaspoons almond extract

Directions:
Preheat oven to 400.  Stir together flour, baking powder and salt.  Mix milk, egg, oil and sugar together well.  Add this mixture to dry ingredients.  Stir until just moistened.  Add almond extract and stir.  Let sit for one minute.  Fill greased or paper-lined muffin pans 2/3 full.  Bake for 20 minutes, or until golden brown.  Makes 12 muffins.

Note:  Chopped almonds can be added to the muffin mixture or sprinkled on top of the muffins if desired.
